‘Specialty coffee’ is more than just a characteristic of our coffee but a classification based on international standards. Specialty coffee begins at the farm. The coffee plant receives special attention beginning with bean variety, soil requirements, air temperature, humidity, altitude and more. After collection, beans can still be disqualified if not up to standard. Only beans of the highest quality are selected and then certified as Specialty Green Coffee. After the beans are roasted, a SCA certified taste tester grades the coffee based on the SCA cupping protocol from 0-100. Specialty coffee must be 80 and above.
Matre Cafe only provides you with higher than 80 specialty coffee.
The Specialty Coffee Association (SCA) cupping protocols grades on the following criteria:
- Fragrance/aroma
- Flavor
- Aftertaste
- Acidity
- Body
- Balance
- Sweetness
- Clean Cup (lack of interfering negative impressions)
- Uniformity
- Overall
- Defects
